I made cake pops!
Successfully.
My first attempt to make them was for my oldest child’s, Linus, birthday party. He wanted cake pops REALLY badly. So I was like, “Ya, sure, why not?”
Well, I’ll tell you why not.
They are not exactly as easy as people like to make them sound. You have to figure out your technique.
Obviously I am still working on mine. But I’m pretty happy with the results.
When I made them for Linus’ birthday things did not go so well. Making the cake balls themselves is pretty easy, so I thought I was well on my way to having perfectly beautiful cake pops.
Then I started trying to dip them.
Oh mother.
That is when things changed and I started throwing things.
A little.
Yes, I am red-headed, Scotch and I have a temper.
However I am also quite stubborn and really didn’t jive with the thought that I had been bettered by cake pops.
So after my husband laughed at me and I announced I had given up, made some cupcakes instead and then went to bed. I started thinking.
And I came up with a plan.
So it turns out that it really just doesn’t work to dip cake pops. They fall off the stick and crumble and bla…….
Turns out you have to hold the pop sideways and spoon the coating over it until it is fully covered, let the excess drip off and start to harden and then stick it in the freezer or fridge. At least that is what I came up with.
I would probably be better off watching some youtube videos but I keep using up all our bandwidth (yes, we have limited bandwidth thanks to living out in the boonies and only having access to satellite internet – which totally stinks, the internet I mean. I love living here.) so I have been trying not to watch videos so much…except my workout ones. Those are a necessary part of life.
Especially when I have been making cake pops and the girl scout cookies I ordered came in yesterday. Oh yes. Girl scout cookies.
I’m in big trouble.
Ok so these cake pops.
I decided I it would be a good idea to make them out of Oreos. Mostly because I had no eggs to make cake and no cake mix. But I DID have a box of Oreos.
We don’t let our kids watch tv or eat dessert during the week. However, after they go to bed it is not unusual for the hubby and I to pop in a movie and have a bowl of ice cream and lately we have been on a kick of eating vanilla ice cream with crushed Oreos all over it.
Thus, we had Oreos.
Don’t tell him I used his Oreos for these….
- 1 package Oreo cookies
- 1 cup (give or take) buttercream frosting
- 2-3 tablespoons Creme de Menthe coffee syrup (I used DaVinci brand)
- 24 cake pop sticks
- 16oz white chocolate
- Sprinkles (optional)
- Place all the cookies in a food processor and pulse until they are fine crumbs.
- Pour them into the bowl of an electric mixer fitted with a paddle attachment. Add about ¾ cup of the buttercream and beat on medium high until it starts to come together to make a crumbly dough. If it does not come together, add more buttercream until it just starts to bind.
- Pour in the creme de menthe and beat until combined.
- Next get a scoop, at least a tablespoon sized - mine is about 2 tablespoons and scoop the balls onto a cookie sheet like with parchment or a silpat.
- Once you have them all scooped out, roll them into neat, round little balls and place them back on the tray.
- Once they are all rolled, place a cake pop stick into each one and place the tray in the freezer to harden.
- While they are hardening, melt your chocolate.
- Once the chocolate is melted and your pops are hard enough, start coating with chocolate. To do this, take a spoon and scoop the chocolate over the cake pop and let the excess drip off, then rotate and coat the other side. Once all the excess is dripped off, sprinkle them if you desire and place them back in the freezer to harden completely.
- Repeat with remaining cake pops.
- Once they have hardened you are ready to enjoy them!
