Yay! I finally have my internet back up and can catch up on my posts! So in case you didn’t read my little blog update the other day, I make a small and simple Thanksgiving feast the other day because my sister and her family stopped by for a couple days on their way across the country. Since they are moving into a new house in a completely new city on the other side of the country I figured she wouldn’t feel much like cooking an enormous meal and also didn’t know if they would get an invite from anyone so I wanted to make sure they at least got something!
I was asked to make sweet potatoes with marshmallows on top for the guys.
Now.
I love sweet potatoes. I do.
However.
I do not like them with the marshmallows on top.
I don’t know why, I just don’t. I think it’s disgusting for whatever reason.
Well, I started looking around for recipes to satisfy their need for sweet potatoes and marshmallows and I found this one. I thought it sounded interesting since the potatoes were mashed. I also took the liberty of changing a couple things, like adding a couple tablespoons of bourbon.
Let me tell you, that this was delicious. I think we all experienced a little bit of heaven while eating this. Marshmallows and all.
I am not totally sure but I think my brother-in-law, Matt, may have licked the pan clean.
- 4 large yams or sweet potatoes
- 1 tablespoons vanilla extract
- 3 tablespoons bourbon
- 3-5 tablespoons brown sugar (to taste)
- 4 tablespoons butter ¼ teaspoons cinnamon
- ¼ whole milk
- 1 bag marshmallows (large or miniature)
- Peel the potatoes and cut into 1 inch or so chunks and then boil them until they are cooked and soft.
- Drain the potatoes and mash until smooth.
- Add the vanilla extract, bourbon, brown sugar, butter, cinnamon and milk and mix until smooth.
- Preheat the oven to 350˚.
- Grease a 9x13 casserole pan and pour half the sweet potato mixture into the pan. Layer some of the marshmallows on the sweet potatoes and then cover with the rest of the sweet potatoes.
- Bake casserole until hot, about 10 minutes.
- Layer the rest of the marshmallows over the top of the casserole and bake an additional 8-10 minutes until the marshmallows are fluffy and browned on top.
