Looking for a different way to fix your veggies? I know we get tired of the same old thing – well sort of – I typically sauté veggies in lots of butter and it’s hard to get tired of that. It’s pretty good. 

Even still, it’s nice to change things up a bit once in a while and keep people on their toes right? 

This is a great way to do that because not only is it delicious, it’s pretty easy to do and we all love food that is easy to prepare. I think I can say this is also kid friendly, assuming you have kids who like their broccoli in the first place. My kids adore broccoli, it’s one of their favorite vegetables and you throw some cheese on there and if I’m not quick enough I might not get any. They’re like a bunch of vultures!

Serves: serves 4-6
Ingredients
  • 1 large head broccoli, cut up
  • olive oil
  • sea salt
  • freshly ground black pepper
  • freshly grated parmesan cheese
Preparation Instructions
  1. Heat your oven to 400˚.
  2. Place the broccoli on a rimmed baking sheet in a single even layer.
  3. Drizzle with olive oil. sprinkle with salt and pepper and toss to coat. Make sure all the broccoli is fairly well coated but not drenched.
  4. Roast for about 10 minutes and then toss and re-spread on the pan.
  5. Bake another 10 minutes and toss again, watch for browned edges, once you see that pull the broccoli out of the oven, but you may need a little more time.
  6. Once it's out of the oven, sprinkle with the parmesan cheese and serve.
