I don’t know about you, but I have been all about the quick, easy meals lately. What with packing up our house and getting it ready to go on the market and training for a couple races this spring and summer, I just haven’t wanted to spend a lot of time cooking.
Baking is a different story.
So when I found myself, at 5pm, with no meat thawed out and no idea what I was going to cook for dinner and the inevitable moment approaching where I find 4 tiny, hungry people in my pantry scavenging for food, I knew I needed to come up with something.
Quick.
When I found this recipe on Lizzy Writes, it seemed to easy. To simple. Could it possibly be good?
At that point it didn’t really matter, I needed to feed them something, anything.
I quickly got the meat out to thaw and went to prep everything and lo and behold, there was virtually nothing to prep.
Huh?
Seriously.
Make rice, throw a few ingredients into a bowl for the sauce, cook meat, toss with sauce.
Boom.
Food.
Now this dish looks fairly, humble. Meat over rice…really?
Trust me, this is PACKED with flavor. It’s amazing. My kids adore this, my husband REALLY adores this and I love it the most because of how easy it is to make.
Alright, get on it.
- 4 cups cooked rice
- 2 pounds lean ground beef (any ground meat will work here! I have used venison and goat)
- 2 tablespoons sesame oil
- 6 cloves garlic, minced
- ½ - 1 cup brown sugar
- ½ cup soy sauce
- 1 teaspoon ground ginger
- ½ teaspoon crushed red peppers depending on how spicy you want it, you can add more!
- salt and pepper
- 1 bunch green onions, diced
- toasted sesame seeds
- In a large skillet over medium high heat, heat the sesame oil.
- Add the meat and garlic, break up the meat into bits and cook until no pink remains.
- While the meat is cooking, combine the sugar, soy sauce, ginger and red peppers in a small mixing bowl.
- Once the meat is cooked, pour the sauce over the meat, stir and bring to a nice bubble, season with salt and pepper.
- Remove from heat and serve over hot rice topped with green onions and sesame seeds.
