Ok so I’ve been pretty into making these chicken salads lately, I know.
But I just love them and it is so easy to have on hand for lunches so I don’t grab something unhealthy in the name of hunger and laziness.
I thought it would be a good idea to change things up a little though. I recently posted my Chicken Curry version of this and of course there is the Classic Chicken Salad…but I thought something even more different seemed necessary so I started grabbing random vegetables out of the fridge and came up with this.
It is so good.
I have been kind of obsessed with it the last couple days. It has good healthy fats in it, proteins, veggies and just pain old yumminess and even though I usually make my own mayonnaise and consider it to be quite healthy, it is nice to replace it with something we all know is super good for you! Hummus.
I use a spicy avocado hummus, by Hope Organics which I buy from Costco. It is SO delicious and has a great ingredient list. If you don’t have a Costco that carries this product though, no worries! You can still make this you just will have an extra step to do to make your hummus.
- 1 cooked chicken breast, cooled and shredded
- 1 carrot shredded
- ½ red bell pepper, minced
- 1 stalk celery, minced
- ¼ cup yellow onion, minced
- 1 avocado, diced
- 1 tablespoon, minced cilantro
- 1 teaspoon ground cumin
- ½ teaspoon chili powder
- ½ teaspoon paprika
- ¼ teaspoon salt
- About 1 cup spicy avocado hummus
IF YOU CANNOT FIND THE AVOCADO HUMMUS COMBINE: - 1 ripe avocado, mashed
- ½ cup garlic hummus
- 1 teaspoon minced jalapeños
- ¼ teaspoon salt
- Place all the ingredients in a medium mixing bowl and stir to combine.
- Serve over fresh greens, as a sandwich or a wrap.
