You know? I have been eating grain free for about a month now and I think I am slowly but surely getting the hang of things and I am finding, making grain free stuff is SO easy.
So much faster than using grains.
I am loving it. I am the only one in the house eating grain free so I have been making the usual pancakes/muffins whatever stuff for the hubby and the kids but then making a little something for myself on the side without grains or sugar. Well I don’t usually give the kids sugar either but the grains at least. So it is imperative that my foods be quick and easy to make or I would likely give up.
I started eating grain free because of several reasons but of course the main one being how I look ;b it’s what motivates most of us I think. In process of being pregnant 4 times I, at some point, developed a Diastasis Recti, which I will not go into great detail about right now (although I am working on a post about it) but basically it means I got to have a nice mommy tummy even a couple years after having my last baby…Yup. I mostly look about 3 months pregnant, part of that is because of the DR, another part of that is because (as you can imagine) after having 4 babies, my core muscles are crazy weak, and another part of that is diet.
While my DR is healed and I am working VERY hard on strengthening my muscles, I figured as an easy, quick fix I would try changing my diet. After much research I decided grain and sugar free was the way to go.
I was right, check it:
No more mommy tummy! I am amazed. While I do still allow myself to cheat once in a while if the hubby and I go out to eat or like this past weekend, it was my daughters birthday and I made this cake:
Obviously I ate a piece. I enjoyed it. But soon after, the tummy came back for a short visit until I killed it again with a nice long run 😉
It’s been interesting.
At any rate. I miss bread.
This is my latest substitute and I am madly in love with it. You would never know it doesn’t have any grains in it. It’s delicious and so crazy fast I didn’t think it was going to work the first time I made it but it totally did.
- 3 tablespoons butter
- ½ cup ground flax
- ¼ cup almond meal
- ¾ teaspoon baking powder
- ¼ teaspoon vanilla extract
- 2 eggs
- ¼ cup fresh blueberries
- almonds to sprinkle on top if desired
- Melt the butter in a large mug.
- Dump in the rest of the ingredients except the blueberries and the almonds and stir with a fork until they are totally combined.
- Toss in the blueberries and sprinkle the almonds on top.
- Microwave for 2 minutes.
- That's it!
