It’s time for Cookie of the Week again and this week I have taken the classic sugar cookie that we all know and love and made it into a bar cookie.
My reason for this?
To make life easier.
I love sugar cookies. LOooooooooove them. If they are in the house I will eat them until they are gone because I have not an inkling of self control around a good sugar cookie.
The problem is it is a lot of work to make so I thought it would be fun to try making a bar cookie and make things easier on myself.
They worked beautifully! They taste amazing, they were easy and quick to make.
Of course I still plan to make traditional sugar cookies as well bt what a great way to be able to eat the already without going to all that trouble!
- 1 lb butter
- 3 cups all purpose flour
- ¼ teaspoon salt
- ½ teaspoon baking powder
- 1 cup granulated sugar
- 1 tablespoon vanilla extract
FOR THE ICING - 8oz soft butter
- 6 cups powdered sugar
- 1 teaspoon vanilla extract
- ½ cup heavy cream
- Preheat the oven to 375˚
- In a small mixing bowl melt half the butter in the microwave. Cut the other two sticks of butter into small cubes and add to the melted butter and stir with a whisk until ints all melted. Set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, combine the rest of the ingredients for the cookies.
- Add the butter and mix on low until combined, add the vanilla.
- Smear a little butter on a rimed baking sheet and then place a sheet of parchment paper over it and press down into the pan.
- Dump the cookie dough onto the pan and carefully spread it to cover the whole bottom of the pan.
- Bake for about 20-25 minutes or until the edges are lightly browned. Depending on your oven you may need to rotate the pan during cooking. My oven always cooks things way faster in the back so I rotate halfway through.
- Once cooked remove from oven and cool on the tray completely.
- To make the frosting place the soft butter in the bowl of an electric mixer fitted with the paddle attachment and beat on high for 5 minutes.
- Turn the mixer to low and add the powdered sugar and vanilla extract.
- Beat until the butter and sugar come together, it will be quite thick so you will need to add some heavy cream, if you are in a pinch you can use half and half but the flavor is better with heavy cream (of course :)) just pour in a little at a time until you have a nice spreadable consistency.
- Then just spread it over the top of the cookie, add some sprinkles, cut and serve!
