Irish Mocha Cookies

It’s time, once again, for Cookie of the Week!

This week I have these delightfully addicting cookie that at first seems like a regular old chocolate chip cookie but when you bite into it, you discover there is more to them than that. 

I am totally in love with these cookies myself and I have had to really try to not remember they are in the pantry and I have been totally forcing them on my kids, “Oh, go have a cookie guys!”

“Don’t you want a cookie?”

“Pleeeeeease eat the cookies children!!!” 

I have very little to no self control when it comes to cookies and I’m trying to get a head start on the January regret of having eaten way to much junk for last 2 months by NOT eating terribly the entire holiday season. 

It’s not going great. 

I have an enormous sweet tooth. 

At least I am thinking about it though and come January it should be an easy transition to NOT having chocolate and cookies in the house constantly. 

Ok so for now though…we have cookies. Delicious, delicious cookies. 

With Irish Cream in them. 

And coffeeeeeeeeeee!

AND chocolate.

Serves: 36 cookies
Ingredients
  • 1 cup soft butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 6 tablespoons irish cream
  • 1½ tablespoons granulated coffee
  • 2¾ cups all purpose flour
  • 1 package dark chocolate chips
Preparation Instructions
  1. In the bowl of an electric mixer, cream the butter with the paddle attachment until smooth and creamy, about 3 minutes.
  2. Add both the sugars and cream until light and fluffy, another 3 minutes.
  3. Add the egg and mix on low until mostly incorporated.
  4. Add the baking soda and salt with the mixer still running.
  5. Add the irish cream and the coffee granules.
  6. Mix in the flour and then the chocolate chips.
  7. Refrigerate dough for about an hour (sorry! I hate refrigerating dough, but it how things worked out for this one....)
  8. Preheat your oven to 375˚
  9. Scoop about 1½ tablespoons dough for each cookie and place evenly spaced on a cookie sheet. Bake about 10-12 minutes each tray and allow to cool on the tray about 10 minutes before moving them to a wire rack to cool completely.
