No seriously. This is so, so, so easy I am fully confident my 4 year-old could make this with almost no assistance (he would, of course, need help moving the pan into the oven).
This was actually my husband’s idea, inspired by a halibut dish he had one our first date and has dreamed about ever since. Unfortunately the restaurant closed soon after and halibut is so expensive I can never bring myself to cover it with cheddar cheese. I can, however, cover cod in cheddar cheese.
I have made this a couple times now when in a hurry to get something…anything… on the table and it was a HUGE hit both times, of course my kids love cod, I would say it is their favorite. I think if they could manage to just switch between cod and steak every night, those kids would be perfectly happy.
Wouldn’t we all!

- 2 pounds fresh or frozen cod fish filets
- sea salt
- freshly ground black pepper
- cheddar cheese slices
- Preheat your oven to 400˚.
- Get a cast iron (or another pan that go stovetop to oven) pan and heat it over high heat. While the pan is heating try to get the fillets as dry as you can with a paper towel and season them, both sides, with salt and pepper.
- Once the pan is pipping hot, add in the filets and brown on both sides (if they will, they often have so much water in them they wont brown, but this is not the end of it, just drain off the water as best you can and continue on).
- Once you have a bit of brown on them, pop the pan into the oven and bake until the fish flakes easily with a fork, about 7-9 more minutes.
- Turn the oven off and top each filet with a slice of cheddar. Let sit in the oven until the cheese starts to melt and then serve.
