I decided yesterday, since it was my kid’s first day of school, that I should make cookies for them for when they came home from school.
So nice of me right?
Like any kids, the only kind of cookie they truly desire is a roll out sugar cookie with sprinkles. Which of course are the most annoying kind of cookie to make. I love sugar cookies too but that is simply a Christmastime treat in my opinion. Only because it’s so much work to make them.
So I decided to make these.
The kids get their sprinkles, I get a delicious cookie that wasn’t hard to make. Win. Win.

Recipe type: Dessert, Cookie
Serves: makes about 2 dozen cookies
Ingredients
- 2½ cups unbleached all-purpose flour
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1½ cups sugar
- ⅓ cup sour cream
- 6 tablespoons unsalted butter, melted
- ¼ cup coconut (you can use vegetable if you prefer) oil
- 1 large egg
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 bottle nonpareil sprinkles
Preparation Instructions
- Preheat the oven to 350˚.
- In a medium mixing bowl, combine the flour, baking soda, baking powder and salt, whisk to combine.
- In the bowl of an electric mixer fitted with the paddle attachment, combine the sugar, sour cream and melted butter.
- Add the coconut oil, egg, milk and vanilla extract.
- Pour in the flour mixture and mix until combined.
- Next add the sprinkles, just dump them in and mix it up. If you are more ambitious than I was and want to roll each cookie dough ball in the sprinkles (like you would a snickerdoodle in cinnamon and sugar) they do come out prettier, but I was going for quick so I simply dumped them in and called it good.
- Scoop out dough balls and place on a cookie sheet. Bake about 8-10 minutes and let cool on the pan for about 5 before moving them to a cooling rack.
