A couple nights ago I found myself coming home right at dinner time. This meant I needed to make dinner in a hurry because I knew the troops would be starving. So I drove home I was mentally going through the fridge, trying to come up with something that would be quick.
I knew I had cod thawed out in the fridge and that it could be cooked quickly, but I had been planning to make my fish ‘n’ chips sandwich and had my husband pick up the vinegar chips for them but then he ate all the chips and I hadn’t made rolls so I figured I needed to come up with a different direction to go with the fish.
So having made recipes with a tomato sauce like this before, just not with fish, I came up with this dish. I knew I had my trusty bread dough already on the rise so I decided to make this good and saucy and serve it with a loaf of fresh crusty sourdough bread.
Yum.
It was good. It was very good. We all gobbled it up, even the kids. My oldest even said, “Mom this is the best fish you’ve ever made!” and he is a professed tomato hater so I took that as a HUGE compliment. It IS possible they were just super starving because they had just spent the entire day with Dad and he forgets to feed them sometimes….who knows, but it was a hit and I really need to start buying 2 bags of cod, these kids eat a lot!
- 2 tablespoons bacon grease or olive oil
- 1 whole onion, diced
- 3 garlic cloves, minced
- ½ cup white wine or chicken broth
- 1 14oz can tomato sauce
- 1 14oz can diced tomatoes
- ½ teaspoon turmeric
- 2 teaspoons dill
- 1 teaspoon sea salt
- 1 teaspoon old bay seasoning
- 1 teaspoon freshly ground black pepper
- 2 pounds cod
- ¼ chopped parsley
- Preheat your oven 400˚.
- In a oven-proof skillet or dutch oven, over the stove heat the bacon grease or olive oil over medium-low heat. Add the onion and allow to cook until just starting to soften.
- Add the garlic and cook for 1 minute.
- Pour in the white wine and simmer for just a minute.
- Pour in the tomato sauce and diced tomatoes and then add all the seasoning except the parsley. Stir in all the seasoning and bring to a simmer for about 10 minutes.
- Place the fish into the sauce and turn to coat. Place the whole thing into the oven for about 15 minutes or until the fish flakes with a fork.
- Sprinkle the parsley over the top and serve hot with fresh bread for dipping.
