My oldest son has had this craving for chinese food lately so I put it on the menu last week finally and as I was making the fried rice I realized I have never posted the recipe I like.
I pretty much always make chinese food rather than go out to eat. It costs a whole lost less, it’s better for you since you can choose what is going into it and seriously, it tastes better.
Most of the time when we go out to chinese food we end up being disappointed in what we get. We have lived in areas where there are wonderful chinese restaurants but the last couple cities we have lived in we just haven’t been able to find any great ones.
So I make it.
I kinda like doing it anyway, that way I can use organic veggies, grass-fed beef and pastured pork 🙂 plus my kids are old enough now they can help with rolling egg rolls and making pot stickers so it’s a fun thing to do together.
Ok so fried rice.
I adapted it to fit my needs from this recipe from the Food Network. I just discovered using Liquid Amino’s rather than soy sauce but I have also used tamari and organic soy sauce and they are all very good but I am loving the Liquid Amino’s (should be in the soy sauce section) I feel like the flavor is not so over-powering and compliments the flavors of the food rather than drown it out.
I also never, ever, ever remember to make the rice ahead of time so I just use it fresh and it works fine, perhaps a bit mushier but still really good.
- ⅓ cup oil, I use bacon grease but olive oil would work fine
- 4 large eggs, lightly beaten
- 1 onion, minced
- 3 cloves garlic, finely chopped
- 1⅓ cups (6 ounces) medley frozen corn, peas, carrots
- 4 cups cold cooked white rice (or if you're like me and didn't see this until you are in the midst of making dinner - you can use hot, freshly cooked rice)
- 3 green onions, minced
- ⅓ pound black forest ham, diced, or about 2 cups cooked, cubed or shredded meat
- Salt and pepper
- soy sauce or liquid amino's
- In a large skillet, heat the oil over medium heat. Pour in the eggs and stir until cooked. Remove from the skillet and set aside.
- Add a little more grease/oil to the pan and add the onion and garlic and saute until just starting to soften.
- Add the veggies and cook and stir until heated through.
- Add the eggs, rice, green onions and ham and stir until all mixed together.
- Sprinkle on the soy sauce to taste just to give a little added flavor.
- Add salt and pepper and serve.
