I don’t know about you, but this dish had me at prosciutto, well the one-tray thing certainly helped too.
And the basil.
And the garlic.
This dish was absolutely incredible. I have been trying to supply you all and myself with wonderful arsenal of easy meals here at Foods of Our Lives because I feel I am lacking in that department and because with the school year underway, I need some help.
School in and of itself is not that big of deal, I am sure for most people it’s the after-school activities that get you. For me, it’s my dairy goats.
Yes, laugh, laugh. We don’t have our kids in sports yet, well I shouldn’t say, yet. We had our oldest in hockey for a couple years but it just wasn’t his thing so we quit and just haven’t gotten into anything else and I am TOTALLY ok with that. But because of where we live, with LOTS of predators, we have to get our animals in before dusk to keep them relatively safe. With the days getting dark earlier and earlier this progressively moves milking time up and it is just about to start clashing with dinner time.
Right now if I do an easy, quick meal like this one, I can just eat dinner and get out there. But next week, I might need to milk with dinner in the oven, or crockpot.
So that is my main reason behind the easy meals 😉 I am sure it is mutually beneficial though.
I loved this one. It may not look like much but, believe me it is PACKED with flavor, all fresh ingredients and super easy to make.
Literally ONE dish.
- Small ciabatta loaf, torn into bite size pieces
- 8 chicken thighs or drumsticks
- 2 cups cherry tomatoes
- ½ cup fresh basil leaves, torn into pieces
- 1 garlic bulb, broken into cloves, skin on
- ½ cup kalamata olives
- salt and pepper
- Olive oil
- prosciutto
- Preheat your oven to 350Ëš
- In a large roasting dish place the ciabatta pieces, then sprinkle the tomatoes, basil, garlic and olives all over.
- Place the chicken pieces on top and sprinkle with salt and pepper and then drizzle with olive oil.
- Place in the oven and bake for 30 minutes.
- Flip the chicken pieces over and bake another 30 minutes. My chicken didn't get super brown so I just turned on the broiler for a few minutes to crisp the skin but you don't have to do that.
- Place the prosciutto in strips over the chicken and bake just for about a minute.
- Remove from oven and serve hot.
