Incredibly Easy Pots de Crème

Pots de Creme

So I went in yesterday and took my oh-so-much-fun glucose test…

…and then came home and made these.

Well, I figure if I do actually end up with gestational diabetes then I won’t be eating anything like this for a few months so may as well have a last hurrah. Right?

Maybe it’s not the best idea. Oh well. It’s done.

Actually the first thing I did when I came home was make a sandwich. Having done these glucose tests numerous times in the past, I have found a really good, meaty sandwich gets you right back to feeling normal after drinking that much sugar liquid.

I am neither a juice or soda drinker normally so consuming that stuff always makes me feel rather ill.

Well after my sandwich I started having a bonafide chocolate craving. Which I think is funny because at the beginning of this pregnancy I couldn’t stand the thought of chocolate. At one point a truffle commercial came on tv and I started gagging. That’s how bad it was.

My husband was shocked out of his mind.

Well chocolate has made it’s way back into my life (praise the LORD!) and last night it REALLY wanted me to eat it. So I made these.

I’m super glad I did because I had another strong chocolate craving after photographing these and had to eat another one.

These are VERY rich. In fact I actually couldn’t finish mine last night.

I ate most of it out of principle, but the last couple bites were a bit tough. I don’t think I have ever come across something to rich for me to finish. I was probably a bit off from the glucose test or something.

But if you are craving chocolate, this will satisfy. Rich, yes, but also creamy, smooth…the perfect texture. And I believe this may have been the easiest dessert I have ever made short of boxed pudding (of course it tastes 100% better than that stuff).

Better go whip it up…

Ingredients
12 ounces, weight Dark Chocolate Chips
4 whole Eggs
Dash Of Salt
1 Tablespoon Brandy
1 cup Very Hot Strong Coffee
Fresh Whipped Cream, For Serving
Fresh Raspberries for garnish

Preparation Instructions
1. Place the chocolate chips, eggs, salt and brandy in the blender (yup, the blender!) and blend until everything is combined.

2. With the blender running, slowly pour the coffee in – just making a salad dressing – nice and easy does it. Blend for a few more seconds, until well combined and smooth.

3. Pour mixture into whatever cups you want to use, champagne glasses, mason jars, doesn’t really matter.

4. Refrigerate until set, at least 2 hours.

5. Top with whipped cream and a raspberry and serve.
