We have really enjoyed this recipe for couscous over the years. I don’t make it a ton, but when I do make it, it gets gobbled up and there’s not much left by the end of dinner.
It is simple to prepare actually, even though it may seem like there’s a lot of ingredients, it’s not bad and you only have to cook the couscous and then add everything else.
Super easy.
The vinegar gives the couscous a nice zesty flavor but isn’t overpowering and still lets the basil and tomato flavors come through.
Tomato and Basil Couscous

Ingredients
- 1 cup chicken broth
- ½ (10 ounce) package whole wheat couscous
- ½ cup chopped green onions
- ½ cup diced seeded tomato
- 3 tablespoons thinly sliced fresh basil
- 2 tablespoons and 2 teaspoons olive oil
- 2 tablespoons and 2 teaspoons red wine vinegar
- ⅛ teaspoon crushed red pepper flakes
- ¼ teaspoon salt
- ⅛ teaspoon pepper

- Bring the chicken broth to a boil, then remove from heat and add the couscous, cover and let sit for 5 minutes.
- In a serving bowl, combine the rest of the ingredients while the couscous is sitting.
- Fluff the couscous with a fork and add to the bowl.
- Toss to combine all the ingredients and put in the fridge until chilled about an hour (or serve it warm if you prefer).
