Whole Grain, Delicious Homemade Waffles

Delicious Whole Grain Waffles

This is actually the same basic recipe as The Best Waffles Ever.  but I changed the ingredients to be healthier whole grain and better oil. These taste amazing and are light and airy so you wouldn’t ever guess they are whole wheat. The kids didn’t even notice and one of Linus’ friends was over for a sleep over and he didn’t notice either, so it’s not just my kids ;b.

YUM!

*Note: the batter will be runnier than you are used to but don’t worry, it will be fine!

Recipe type: Breakfast
Serves: makes 6 waffles
Ingredients
  • 1¾ cups freshly ground pastry flour (I have used many different combinations of flours including coconut flour and oat)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 egg yolks
  • 1¾ cups milk
  • ½ cup coconut oil
  • 2 egg whites
Preparation Instructions
  1. In a medium mixing bowl combine the flour, baking powder and salt.
  2. In another small bowl combine the yolks, milk and oil. Pour into the dry ingredients and mix just until combined, should still be a touch lumpy.
  3. Beat the egg whites until stiff peaks form. For this small of a recipe I use a large whisk in a small bowl and it only takes a couple minutes, I started doing this recently because I ‘upgraded’ stand mixers and it turns out the 6 quart pro mixer is a tad too large for doing 2 egg whites. You kind of need 3 or it takes forever. It’s easier for me to just do it the old fashioned way. But if you have a smaller mixer then do it that way if you please.
  4. Anyway, once the whites are nice and stiff, gently fold them into the batter.
  5. Heat the waffle iron and cook to desired doneness.
  6. Top with your favorite waffle toppings and serve.

Additional note: when I am feeling lazy I don’t seperate the eggs and beat the whites – I just throw the whole egg in and it works great. You just get a slightly denser waffle
