I make these at least once a week for our family and there is almost never any leftovers.
If you over-cook them just a touch then the sugars from the yams start to ooze out a little and you get this candied flavor without the addition of any other sugar. Yum.
I know it may seem to odd to some to leave the skins on but they are delish and it’s SO much easier NOT to peel them.
And I am all about easy!
Simple Roasted Yams

Serves: serve 4-6
Ingredients
- 2-4 whole yams or sweet potatoes
- ¼ cup extra virgin olive oil
- sea salt
- freshly ground black pepper
Preparation Instructions
- Preheat oven to 425º.
- Dice the yams to about ½ inch dice.
- Place on a rimmed baking sheet and drizzle about ¼ cup or so olive oil over them. So when you toss them they get a nice coating of oil.
- Sprinkle generously with salt and pepper, toss to coat.
- Place in the oven and roast, tossing occasionally to ensure even cooking, until soft and wrinkly, about 25 minutes.
