Who likes granola bars?!! I do!
I especially like the soft, chewy kind. But those tend to be the really unhealthy ones when you get them at the store. But these little guys are nice and chewy and healthy!
So far I have a thumbs up from Jeremiah, Juliette and myself. Linus decided he wasn’t hungry and Christian is asleep so I’ll get their reactions later.
OH! The best part! These were REALLY easy to make! Yay!
UPDATE: This last time making these I decided to melt the chocolate and spread it in the bottom of the pan to create a chocolate layer rather than chunks. I love how it turned out, I melted about 3/4 cup chocolate chips in a mug in the microwave for about a minute, stirring about every 20 seconds. Then I covered my 9×13 pan with foil instead of parchment and spread the chocolate over the bottom. Then I pressed the granola mixture in and refrigerated it overnight. When I went to cut it, the foil just peeled right off and I was able to cut them into bars. Yum!
(makes about 24 bars)
Ingredients
3 cups granola
2 cups rolled oats
3 tablespoons wheat germ
2 tablespoons chia seeds
1/2 cup chunky natural peanut butter
3/4 cup honey
1 teaspoon vanilla extract
3/4 cup mini chocolate chips or chunks of dark chocolate
3/4 cup shredded coconut
Preparation Instructions
1. Line a rimmed baking sheet or 9×13″ pan with parchment paper and set aside.
2. Preheat the oven to 400º. Toast the oats and the wheat germ, tossing every few minutes, until golden, about 15 minutes. Remove from the oven and allow to cool.
3. While the oats are toasting, combine the honey, vanilla and peanut butter in a small saucepan over medium heat. Stir until combined and then remove from heat and allow to cool.
4. Once everything is cool combine everything in a large mixing bowl and stir until well coated with the peanut butter mixture.
5. Dump into the prepared pan and press firmly into the pan and set in the refrigerator until firm. About 30 minutes.
6. Remove from the fridge and use the parchment paper to lift the mixture out of the pan. Set on a cutting board and cut into bars.
NOTE: I made both the Berry Granola Bars and these with the same batch by mixing everything except the chocolate and coconut together and then dividing the mixture in half. That way you end up with two different varieties but only put in the effort once 🙂
