We had a bit of ham left from Easter a few years ago and it needed to be used up. Jeremiah and I decided we didn’t feel like ham soup so I started looking around to find something you can do with leftover ham that ISN’T soup.
I have been making this ever since.
It’s very easy to put together and tastes amazing. Every time I make a ham, we have this the next night and everyone goes crazy over it. I like to use the ‘homemade’ style egg noodles they sell at Costco but if you can’t find something like that, regular egg noodles work wonderfully.
Ham and Cheese Casserole

Ingredients
- 16 ounces dried egg noodles, cooked
- 3 cups chopped, cooked ham
- 1 tablespoon butter
- ½ cup finely minced onion
- ¾ cup white wine OR chicken broth
- 2 - 15oz can cream of chicken soup I like to use my homemade powder
- 2 cups shredded swiss cheese or brie
- ¼ cup water
- kosher salt and fresh ground pepper to taste
- 1.5 cups crumbled focaccia bread or seasoned stuffing mix
- 2 tablespoons soft butter
Preparation Instructions
- Preheat oven to 400º.
- In a large saucepan over medium heat, melt the butter and then add the onion. Cook until just starting to soften.
- Add the wine and simmer about 2 minutes.
- Add the cream of chicken soup or if using the powder add ⅔ cup of the powder to the pot and pour in 2 cups water. Stir until thickened.
- Add the cheese and if needed a little more water to thin it if too thick.
- Add the ham and the noodles and stir to combine.
- Brush a 9x13 baking dish with soft butter or cooking spray and then place the ham and cheese mixture into the dish.
- Sprinkle the bread crumbs evenly over the top and then dot with small pieces of butter.
- Bake about 20 minutes or until heated through and the cheese melted.
- Crock Pot Instructions:
- Combine all ingredients in a mixing bowl, except the stuffing mix and soft butter. Brush the inside of the crock pot with soft butter or cooking spray and place the ham and cheese mixture in the crock pot and then sprinkle the bread crumbs evenly over the top. Dot with the soft butter all over and cook on low for 6 hours.
