I found myself at Costco the other day….by myself. Which meant I had the opportunity to browse a little more than normal. So I found myself in the cheese aisle buying an enormous wheel of brie. I had no idea what was going to happen with it, but I knew it would be good. First I made Brie and Strawberry Grilled Sandwiches for breakfast, and now this.

Which was absolutely delightful. If you love lots of smooth, melted cheese you will love this.

Brie and Bacon Quiche

Ingredients
  • ½ recipe Grandma’s Pie Crust
  • 4 ounces, weight Brie Cheese (rind Removed If Preferred)
  • 4 ounces, weight Swiss Cheese, Diced
  • 10 slices Bacon, Cooked Crisp, Drained, Crumbled
  • 6 whole Large Eggs
  • ½ cups Whipping Cream
  • ½ cups Sour Cream
  • 1 teaspoon Worcestershire Sauce
  • Dash of salt and pepper
Preparation Instructions
  1. Preheat oven to 375º.
  2. Roll pie crust out to fit in a deep dish pie pan. Carefully place the crust in the pie pan and crimp the edges.
  3. Crumble both the cheeses in an even layer in the pie crust, then add the bacon.
  4. In a medium bowl, whisk together the eggs, cream, sour cream, worcestershire sauce and salt and pepper.
  5. Pour cream mixture into the pie shell.
  6. Bake until a toothpick inserted into the center comes out clean, about 45 minutes (1 hour at high altitude).
  7. Remove from oven and let sit 10 minutes before serving.
