Steel cut oats take FOREVER to cook when you do it on the stove top. So I do it my small crock pot overnight and they are delightful. I love to come down in the morning, switch on the coffee pot and go scoop out a bowl of warm, comforting oatmeal. Mmmm.
You might notice I use a variety of different toppings on mine. I find that adding lots of fruit and berries gives it so much flavor that you don’t need to add much sugar, plus it helps me to stay full even longer.
(serves 4)
Ingredients
1 cup steel cut oats
3 cups water
1 whole apple, peeled and chopped
1 teaspoon cinnamon
1/4 teaspoon salt
Preparation Instructions
Put everything in a small crock pot and turn it on low right before you go to bed.
Wake up in the morning, turn off the crock pot (it will stay warm for a long time in there) and serve yourself a heaping bowlful.

Sucanat Sugar, honey or maple sugar
