4 heads of garlic, separated, peeled and little brown ends trimmed off 1 tablespoon extra-virgin olive oil 1 teaspoon fine sea salt 1/2 teaspoon freshly ground black pepper (You can use store-bought peeled garlic to save time if you want to!) Preheat the oven to 375f. Place the garlic in a baking dish. Drizzle with olive oil, and season with salt and pepper. Pour 1/2 cup water over the garlic. Cover the dish with foil. Bake the garlic until lightly colored and soft about 1 hour. Remove the foil and return the dish to the oven. Continue baking until the garlic is nice and golden brown and the tops of the cloves look dry, 15-20 minutes longer. Let cool slightly, then drain off any liquid. Let cool completely. Can be kept in an airtight container in the fridge for up to 4 days.
