If you have never brined anything – you need too. Brining is very easy, it keeps your meat extremely moist and it takes the flavor of your meat to a whole new level.
You just have to remember to actually do it. Which is usually my problem.
This one only needs to sit in the brine for 2-3 hours though so it is pretty do-able.
Then at the end of cooking you brush on that glaze…oh man.
Talk about finger-licking good.
I don’t think there was a bite left of this delicious dinner and the last piece was actually fought over.
Honey Brined Chicken

Serves: serves 4-6
Ingredients
- 6 cups water
- ½ cup coarse salt
- ½ cup honey
- 1 whole chicken, cut into parts
- pepper
- ½ cup honey
- 2 tablespoons bourbon
Preparation Instructions
- Bring water, salt, and honey to a simmer in a medium-size saucepan over medium-low heat, stirring until salt dissolves. Let cool completely.
- Place chicken in a plastic ziptop bag and pour cooled brine over top.
- Refrigerate, covered, for 2 to 3 hours.
- Remove meat from brine, rinse under cold water, and pat dry with a paper towel.
- Season with pepper.
- Grilled over medium heat until internal temperature reaches 165˚.
- Combine the ½ cup honey and bourbon and brush on chicken at the end of grilling, turning and basting for the last 10 minutes or so of grilling.
