Ok please don’t judge me by the fact that my Fat Rascals don’t have Glacé Cherries 🙁 I didn’t realize stores in the U.S. don’t carry them except during the holidays. SO I had to go without but they were still amazing. They are super light but still have a bit of a biscuit quality and the combination of flavors just bursts in your mouth.
I found about these tasty little things from my sister’s, sister-in-law who lives in the U.K. and posted hers on facebook and I just had to know about them. So she gave me the recipe and I made them for the women’s ministry brunch for our church.
Ingredients
(lucky for you I converted all the quantities and terminology already 🙂
1 medium egg, lightly beaten
1 cup all-purpose flour
1 cup self rising flour, sifted
1 tsp baking powder
1 1/2 sticks cold butter, cubed
3/4 cups granulated sugar
Grated zest of 1 orange
Grated zest of 1 lemon
1 tsp ground cinnamon
½ tsp freshly grated nutmeg
1 cup mixed dried fruit (try currants, raisins and sultanas in equal quantities)
3 -4 tablespoons milk
To finish:
1 medium egg yolk
1 tbsp water
Pinch of salt
Glacé cherries and blanched almonds, to decorate
Preparation Instructions
Preheat oven to 400º.
Combine both the flours together in a large mixing bowl. Add the butter and rub into the flour until course crumbs form.
Add the sugar, both zests and the dried fruits and mix well.
Add the egg and just enough milk to bring the dough together.
Drop about 1/3 cup of the mixture into heaps on a parchment lined baking sheet. Combine the egg yolk, water and salt and brush a little on each heap. Decorate with glacé cherries and almonds.
Bake about 15-20 minutes or until golden brown.
Serve with clotted cream or tons of butter or if you can’t find the cherries, a cherry preserve goes nicely. But they really have tons of flavor and don’t even need anything extra!
