Have you ever eaten at Red Lobster? I have, a long time ago. The food isn’t spectacular but I do enjoy the biscuits they bring out.
I am not really willing to eat at a sub-par restaurant just to get my hands on their biscuits however (and I haven’t lived near one in years) so I decided a long time ago I should come up with a copy cat recipe.
My sister, Emma provided me with a recipe she had from somewhere and I changed this and added a little of that to make them….not healthy exactly…but more whole foodish. So this is my version, they are delicious, not made from biscuit mix or garlic powder just real stuff. If you like, you can certainly sub in whole grain flour and make them a bit better for you.
My family loves these and there is rarely any left over. Gobble, gobble….
- 2 cups all purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup shredded cheddar cheese
- 2 cloves garlic, chopped and mashed (or run through a garlic press)
- ½ cup cold butter, cubed
- 1 cup buttermilk
- 4 tablespoons butter, melted
- 1 clove garlic mashed
- Parsley flakes, for sprinkling.
- Preheat oven to 375˚
- In a medium mixing bowl, combine the flour, baking powder, baking soda, salt, cheese and garlic. Stir to combine.
- Cut in the butter with a pastry blender - if you don't have one use your fingers and then chill the dough for about 15 minutes - until the mixture resembles course sand.
- Pour in the buttermilk and stir gently with a fork, leave it lumpy though! It works best to only stir until the liquid has just barely been taken up and then stop.
- Carefully dump the mixture out onto a floured surface, knead a couple times and then shape into a disc about an 1½" thick. Cut out your biscuits and place on a baking sheet (my cutter is about 1½" across).
- Bake about 15 minutes or until the tops are just turning brown.
- Remove from the oven and combine the melted butter, garlic clove and parsley, brush this over the top of each biscuit and serve.
