This was rated #2 best meal I have ever cooked by my lovely husband last night! #1 is the Steak Marsala from the night before. I was pretty impressed with myself for getting #1 and #2 within 2 days of each other.
But really this was great.
I used my homemade BBQ sauce and it was definitely what made the meal. Of course you can use whatever sauce you like, I just highly recommend this one.
It has bourbon in it.
The other great thing that I did was forget to buy buns to put the pulled pork on. So I was halfway through the day, the kids were about to go down for naps and I remembered I hadn’t bought anything. So I decided I had two options 1. Go to the store after nap with all 3 kids to get buns or 2. try making my own from scratch.
I went with option 2.
(serves 6)
Ingredients
1 (3 lb.) boneless pork shoulder, skin and excess fat removed
2 onions, thickly sliced
1/2 cup low-sodium chicken broth or water
2 cups bottled or homemade barbecue sauce
2 tablespoons dijon mustard
2 tablespoons honey
1 tablespoon soy sauce
Kosher salt and freshly ground pepper to taste
Preparation Instructions
Place the onions in the bottom of the crock pot in an even layer. Place the pork shoulder on top and pour in the chicken broth or water.
Put the lid on and cook on low for 10 hours.
Very carefully remove the pork from the crock pot to a cutting board. Using two forks, shred all of the meat.
Skim as much of the fat from the top of the liquid in the crock pot as you can and add in the BBQ sauce, mustard, honey and soy sauce.
Add the meat back into the pot and stir around. Turn the crock pot back on low for another hour.
Serve on bread or hamburger buns with fresh tomato and lettuce.
