This is a super easy meal to make and it’s SO good! Gotta love a recipe that all you have to chop is an onion. Done. Throw everything in the pan and call it good.

I used to make this all the time and I swear, when we moved to Montana I just completely forgot about a whole bunch of recipes – I don’t know where my brain went!
Maybe it has something to do with moving with a newborn and buying chickens and dairy goats all at the same time. A lot of things just kind of went out the window and I think I am finally starting to come back from it all…mentally :).
- 1 tablespoon butter
- 1 tablespoon extra virgin olive oil
- 1 onion, chopped
- 1 28oz can crushed tomatoes
- 1 14oz can diced tomatoes
- 1 cup heavy cream
- ¼ cup vodka
- ¼ teaspoon crushed red pepper flakes
- kosher salt
- freshly ground black pepper
- 2 tablespoons fresh basil, minced
- 1 pound penne pasta
- freshly grated parmesan cheese
- In a large skillet over medium heat, melt better with oil; add onion and saute for 8 minutes or until transparent.
- Add both cans of tomatoes and cook for 25 minutes or until thick; stir frequently.
- Increase heat to medium-high and add cream, vodka and red pepper flakes; boil for 2 minutes or until thickened to sauce consistency.
- Season to taste with salt and pepper.
- Bring a large pot of salted water to a boil. Add penne and cook for 8 to 10 minutes or until soft. Drain and put in a large serving bowl.
- Add basil to sauce and pour over pasta. Toss to combine, serve with freshly grated parmesan cheese if desired.
