This recipe is certainly not new to this site, or to me.
However, it has been quite a long time since I made it, it needed an updated photo, my family didn’t even remember eating it and I had a bunch of cauliflower that needed to be used up… so I decided to make it for Soup of the Week mostly so I could draw everyone’s attention to this divine and delicious soup.
Warning: This is extremely NOT low fat.

We have butter, we have heavy cream and we have sour cream.
Absolute perfection.
This is a pretty easy soup to make since it does not require long amounts of simmering time to cook meat to tender perfection, just the cauliflower and carrots, and that’s not so bad.
I made some of my favorite incredibly easy artisan sourdough bread mini loaves to go with it and I could. not. help. myself.
The next day was extremely cold, as in like -14 when I went out to milk the goats and when it’s that cold I usually am STARVING by the time I come back into the house, so here I was starving, with this soup and a mini loaf of delicious bread.
What does a girl do?

- 1 stick butter
- ½ large onion, diced
- 3 carrots diced
- 1 stalk celery, diced
- 1 large cauliflower head, roughly chopped
- 2 tablespoons fresh or dried parsley, minced
- 2 quarts chicken broth
- ½ cup plus 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- salt to taste
- ½ cup sour cream
- In a large stock pot or dutch oven, melt the butter.
- Add the onion, carrots, celery, cauliflower and parsley, cook for about 15-20 minutes until things start to soften a bit.
- Pour in chicken stock or broth. Bring to a boil, then reduce heat and allow to simmer for 15 minutes.
- In a small bowl, combine the milk and flour until you have a smooth paste, pour into the soup and stir to combine.
- Stir in heavy cream.
- Stir and cook until it is hot and has thickened.
- Add the sour cream.
- Check seasoning and add more salt or pepper if necessary.
