Quiche Lorraine

This is yet another of Jeremiah’s grandma’s recipes that I LOVE. I always make it for Christmas morning and any other special occasion I can possibly think to make it for. I really prefer making it for smaller groups so I can have at least 2 pieces. 

I am a glutton. What can I say?

Seriously it pretty much has everything in it that I love, eggs, cream, bacon, onions…the only thing missing is chocolate but I’ll forgive that ingredient considering I can’t find a way to make it taste good.

I also make this fairly regularly without a crust because if you don’t have a crust to make, roll out and bake this recipe comes together in a snap. Making it a frittata 🙂 Yum. You just make all the filling stuff and skip the crust instructions, pour it into an already hot cast iron skillet and bake it. Super quick and easy, sometimes though, you just need a crust. A good, buttery, flakey crust and trust me, Grandma’s crust is all that.

So for those times when you need a crust on your quiche, make this:

Serves: 8
Ingredients
  • ½ recipe Grandma’s Pie Crust
  • 12 pieces bacon, cooked so crispy and then crumbled
  • ¼ cup onion finely minced
  • 1 cup shredded swiss cheese
  • 4 eggs
  • 1½ cups heavy cream
  • ½ cup milk
  • ⅛ teaspoon cayenne pepper
  • Salt and Pepper
Preparation Instructions
  1. Preheat oven to 425º.
  2. Roll out pie dough and place in a pie plate.
  3. Sprinkle bacon in the bottom of the pie crust, then the onion and then the cheese.
  4. In a medium bowl, combine the eggs, cream, milk, cayenne, salt and pepper. Pour into pie crust and then bake at 425º for 15 minutes
  5. Reduce heat to 350º and continue baking for about 30 minutes or until egg filling is set.
  6. Remove from oven and allow to cool about 10 minutes before serving.
