OH yum. These were really good. The toasty flavor from almond sets off the sweetness from the caramelized shallots just oh so perfectly.
They are really quite easy to make and certainly a nice change-up from the normal steamed peas with butter and only take a couple extra minutes.
So delicious.
I have no idea where I got this recipe originally. I’ve been making it for ages. Did a quick google search and nothing came up. Let me know if this is your recipe so I can give you credit!
But seriously, make these tonight, they go with just about everything.
Peas with Toasted Almonds and Caramelized Shallots

Serves: makes 2 cups
Ingredients
- ¼ cup sliced almonds
- 3 tablespoons butter
- 2 shallots peeled and thinly sliced
- 2 tablespoons sugar
- 2 cups peas, I used frozen but fresh would be amazing
- kosher salt
- freshly ground black pepper
Preparation Instructions
- In a dry pan toast the almonds over medium heat, stirring the whole time and watching carefully, they brown quickly. Remove from pan and set aside.
- Add butter to pan, once melted, add the shallots, cook until soft about a minute or two.
- Sprinkle sugar, salt and pepper over the top. Stir until the sugar is dissolved, reduce heat to medium-low and allow to caramelize for about 7-8 minutes without stirring.
- Add the peas to the pan and toss to coat with the shallot, butter mixture until the peas are cooked, you may need to add a bit of additional butter if it looks a bit dry.
- Add the almonds.
- Once everything is cooked, serve hot!
