This is one of my favorite go-to snacks. I love to eat it before a workout since it provides a good amount of carbs through the granola.
Putting frozen berries in plain yogurt is one of my all-time favorite tricks when I am trying to avoid sugar. It freezes the yogurt surrounding the berries and it’s kind of like eating ice cream… yes you still have to pretend a little, but it’s a nice substitute. When you go a while without eating sugar you do get used to it and suddenly things like simple berries become a nice treat.
Also I do make my own yogurt from my goat’s milk, which means the yogurt is quite a bit less sour than store-bought plain yogurt. I often eat it just plain because it’s so good. If you would like instructions for making your own yogurt click here.
This particular parfait was also made using my own granola recipe, which is delicious and also does not have any refined sugar in it. See? I am doing quite well with the removal of sugar aren’t I?
So you can really take this and twist it however you want, I just wanted to share what I have been eating to stay healthy, what healthy snack do you love?
- plain or vanilla greek yogurt
- frozen berry mix
- granola
- toasted, sliced almonds
- If you have a toaster oven, that is the best for toasting small quantities of nuts, if not the regular oven will work fine. If using the toaster oven, pop a handful of sliced almonds in there, turn it to bake and bake them for about 7-8 minutes. If using the oven heat to 350º and once hot, pop you nuts in there and also toast about 7-8 minutes, until aromatic and slightly brown. Or you can just not toast them, it’s up to you. This little snack is very flexible.
- While the nuts are toasting, find a jar or cup and spoon a little yogurt into it, maybe 2-3 tablespoons. Next a handful of frozen berries and then a small handful of granola. Repeat steps until glass is full and then sprinkle the almonds on the top and eat!
- Of course you can use whatever yogurt you want with whatever berries you want or if you want it sweeter you could even use jam or pecans or walnuts. I mean really, the possibilities are quite vast.
