I am pretty sure we all had seconds of this one! Even the kids loved it.
Ingredients
1 large acorn squash
1/2 cup butter, cut into small pieces
brown sugar to taste
Preparation Instructions
Preheat oven to 400º. Slice the squash in half, remove seeds and pulp. Place face down on baking sheet, cover with foil. Bake in the oven for about 35 minutes or until soft. Remove foil, flip over each half and roast another 15 minutes or until browned a little on top and the flesh is very soft. Remove from oven, put half of the butter in each half of the squash. Using a large spoon, mash the butter into the squash, scraping the flesh away from the skin, until the squash and butter and roughly mashed and combined. Put a scoop on each plate and sprinkle a little brown sugar over the top. Serve hot.
