I refuse to buy the box stuff with all the garbage they put in those, I am even suspicious of the organic versions so I just don’t even bother. As my regular followers should know, I like to know everything that is going into my food and even with organic versions I have looked at there is still all kinds of ingredients with mysterious names. I am sure my scientist husband could tell me what a lot of the ingredients are but I just don’t like it, so I don’t go there. I just make my own! This is still not something I make even every week but when we need a quick something on the weekends or when other kids are over I’ll whip this up. It’s basically just a white sauce with cheese in it. Pretty basic, pretty easy to do and pretty tasty.
Homemade Macaroni and Cheese

Ingredients
- 1 pound large macaroni noodles
- 2 tablespoons butter
- ¼ cup flour
- 1½ cups whole milk
- ½ teaspoon salt
- 1 cup cheddar cheese if you like it really cheesy feel free to add more (I like Tillamook sharp cheddar)
Preparation Instructions
- Cook the noodles according to the package directions.
- Melt the butter in another pot over medium heat.
- Once it’s all melted add the flour and stir until smooth, let cook for about a minute, stirring.
- Add a couple tablespoons of the milk, stir until thick then add a couple more tablespoons and stir again until thick. Continue like this until all the milk is incorporated and the sauce is thick and smooth.
- Add the cheese and stir until melted, add the salt.
- Once the noodles are done drain, mix with the sauce and serve.
