Is anyone else trying to eat healthier this year?
I am.
Not like a resolution. I hate New Years Resolutions. I think it stems from the years I spent going to the gym and right after the new year the parking lot would be so crammed full of cars us regulars couldn’t find a spot to park except way out in the middle of no-where and then I would have to haul all my kids, diaper bag, snack bags and my gym bag into the gym.
Ack, it was SO annoying and then by mid February things would all be back to normal again. Drove me nuts.
Thus I have always refused to make ‘New Years Resolutions’. So I started eating healthy right after Thanksgiving 🙂
And I no longer work out at the gym. Who has time for that?! Plus it costs an arm and a leg.
But I digress.
Protein Balls.
These are wonderful little snacks, I have been making them for years. My husband always thinks they are cookie dough and is slightly disappointed, but the kids and I love them.
I find them to be filling and if I do have a sweet tooth, they will satisfy that quite well because once your body is used to not having sugar that little bit of honey goes a long way.
I typically make these in a huge batch since my kids devour them, like I start with about half a large jar of peanut butter and go from there. But this is a nice small batch if you want to try them.
I have no doubt you will like them.
- 4 tablespoons of natural peanut butter (no salt or sugar added)
- 4 tablespoons of raw honey
- 1 cup vanilla protein powder
- 4 tablespoons of unsweetened shredded coconut
- 2 tablespoons of slivered almonds
- 2 tablespoons of raisins
- Combine all ingredients in a medium mixing bowl and then shape into balls. I use a 1½" scoop to shape the balls.
