So I have a couple of healthy snacks I would like to tell you about.
The first one is one of my favorite filling and healthy snacks for after I have worked out. I save it for post-workout since it has a lot of carbs. It is quite and simple and a little different than your typical snack but just about tastes like apple pie.
Cinnamon Apple Toast
Ingredients
- 1 apple, shredded (you can peel it first if you want but I like to leave the peel)
- Cinnamon and whatever other pie spices sound good to you, I usually do a bit of ginger and ground cloves.
- A slice of bread
- Walnuts or pecans
Preparation Instructions
1. First, toast your bread.
2. While it is toasting put your shredded apple into a frying pan. No need to add any oil or anything, the apples are moist enough to keep from sticking. Toss in a bit of cinnamon and whatever spices you have decided on and toss around with a fork until apple is lightly coated in the spices.
3. Once the toast is done put it on a plate, top with apple and a few nuts and there you have it.
Note: Shredded apple is a great baby food – it is easy to pick up with little fingers and easy to chew.
Frozen Blueberries and Yogurt
This is a snack I was introduced to when we lived with my friend Beccy’s parents. Her mom, Ginger would have this for breakfast and I have fallen in love with it as a snack or a healthy dessert. The frozen blueberries sort of freeze the yogurt and it’s almost like ice cream.
Ingredients
- Frozen blueberries
- Vanilla or plain non-fat yogurt (My favorite is greek yogurt with a bit of honey)
Preparation Instructions
1. Mix ingredients together and eat! I usually do about a handful of blueberries (about 1/4 cup) and then just enough yogurt to coat well, about 1/3 cup.
