I don’t know about you but there are days when I just crave some good old fashioned comfort food for breakfast. I love my eggs and veggies but once in a while I need something sweet.
Yesterday was that day for me. I have been sorting, packing and cleaning like a mad woman (hence the extreme lack of posting, due to an extreme lack of cooking) as we have been trying to prepare our house for going on the market and making a cross country move and I just didn’t feel like putting a lot of effort into my breakfast but I knew it still needed to be healthy and delicious.
Thankfully this was both!
I did make this initially with cocoa nibs and it was fine, but a tad on the bitter side, so know that you can go that route but it won’t have a lot of sweetness and if that’s what you’re looking for you may not be terribly happy.
The second one I made up, I used chocolate chips, and that definitely was better. You can certainly use one of the healthier chocolate chips available. I will leave that up to you. I do just use regular ones since it is such a tiny amount I don’t worry about it too much but if you really can’t do the sugar then maybe go with cocoa nibs or just leave them out completely, you could even switch to some chopped nuts.
At any rate I have no doubt you will love this muffin, it is chocolaty and delicious and just the perfect start to the day!
- 1 tablespoon butter
- 1 tablespoon cottage cheese
- ½ teaspoon pure vanilla extract
- 1 teaspoon agave nectar or ½ teaspoon powdered stevia
- 1 large egg
- 1 tablespoon cocoa powder
- ⅛ teaspoon baking soda
- 1 tablespoon unsweetened shredded coconut
- 1 heaping tablespoon almond meal
- 1 tablespoon chocolate chips (60% or higher), cocoa nibs or chopped nuts
- Place the butter in your chosen mug, microwave just enough to melt.
- Add the rest of the ingredients to the mug, except the chocolate chips.
- Stir with a fork until homogenous.
- Add the chocolate chips and stir.
- Place in the microwave for 2 minutes on high.
- Be careful, it will be hot!
