I have been eating grain free and sugar free for about a month now and recently I was kind of ready to have a treat.
You guys know I know love treats.
But I have been trying to turn sweet things back into being just that…. treats. Because lately they really haven’t been, they’ve been more on the regular side of the menu.
In an effort to give myself something delectable that I could enjoy without ruining what I’ve been working so hard at I decided I should make some of these healthy brownies I’ve seen all over Pinterest.
None of the ones I tried really hit that gooey brownie spot so I decided to come up with my own.
I think these do it.
They are moist and RICH. Oh so rich. So delicious. I am in love.
The best part is, since they are grain and sugar free… except for whatever trace amounts of sugar there is in 60% chocolate and you can go darker and get less sugar… these are not going to spike your blood sugar.
These. Are. Healthy.
Can I hear an AMEN?!
Um. Yes.
As you can see in the photo, I have been having these with straight up cream. I am eating high fat after all 😀 but you need something to break up the richness and while coffee would work just as well, I opted for cream and it is perfection.
I don’t add anything to it, just pour it on and enjoy.
NOTE: These brownies will rise up and be lighter and fluffier than the ones in the photo, since photographing them I added a couple ingredients but I like the photo so I am leaving it for now 😉
- 4oz butter
- 8oz chopped dark chocolate, at least 60%
- 1 tablespoon cocoa powder
- 3 tablespoons avocado oil (or any other healthy oil, olive works fine)
- 1 teaspoon powdered stevia or ½ cup erythritol
- 1 teaspoon baking powder
- 3 eggs
- ⅓ cup almond flour
- 1 tablespoon coconut flour
- Preheat your oven to 350˚.
- Prepare a 8"x8" pan by smearing with butter, set aside.
- Place the butter, chocolate and oil in a double boiler and stir until the chocolate and butter are melted.
- Add the remaining ingredients and stir until thick and homogenous.
- Pour into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 35 minutes.
- These are delightful served warm...
