As always I have been trying to find ways of continuing to snack on yummy treats without ruining what I am trying to accomplish with my ‘diet’.
Not as in, “I am on a diet”
I absolutely HATE that phrase.
I am hoping for a lifestyle change here. Not a crash diet.
Eating fat in place of carbs is working extremely well for me, I feel full so long as I get enough fat in my diet and I don’t have a ‘Carb-baby belly’ anymore.
Well. I didn’t until I ate part of a chicken bake from Costco yesterday…which I really didn’t want to eat but took a few bites because I was STARVING and was being tempted by my husband.
Anyway….return of the belly.
But I went for a 7 mile run during the Super Bowl and I feel much better now.
Back on track until next weekend when my daughter has her Frozen birthday party, at which I will eat cake because (of course) she has chosen my FAVORITE flavor (Lemon Curd).
At any rate, these little nibbles are one of the ways I have been staying full between meals. They are delicious but don’t expect sweetness. I am avoiding certain types of carbs remember…not the healthy fruit and whole grain type carbs but the sugary white bread kind of carbs (like cake!) so there is no sweetener added but if you want, you could add 1/4 cup of maple syrup to yours (after creaming the butter and cream cheese) and if you are using a high quality B grade syrup you will be adding all kinds of nutrients, which is great.
I just have been avoiding raising my insulin levels with sugars so I did not add any.
- 16 oz soft cream cheese
- 4 oz soft salted butter
- ¼ cup maple syrup (optional)
- 3 cups shredded, unsweetened coconut
- 3 cups finely chopped almonds, divided in half
- 1½ cups chopped dark chocolate (at least 60%)
- 3 oz melted dark chocolate
- In the bowl of an electric mixer fitted with the paddle attachment combine the cream cheese and butter and beat on high for 3-4 minutes, until light and fluffy.
- Add the maple syrup, if using, and mix until combined.
- With the mixer on low, add the coconut, 1½ cups of the almonds and the chopped dark chocolate.
- Using a 1½" scoop or a spoon scoop out into balls, roll in the remaining chopped almonds.
- Once you have all of the mixture turned into balls and rolled in almonds, drizzle with the melted chocolate.
