Chicken Curry Salad | FoodsOfOurLives.com

I just happen to love chicken curry (all kinds, but this particular one is more of a sweet curry than spicy) and I wanted to a way to eat it for lunch, have it be easy to make and healthy. 

I am not a huge lunch eater, I have a tendency to skip it because nothing sounds good (if there aren’t any leftovers), I sort of despise most sandwiches for some reason. Just not my favorite. And I never feel like making anything.

Often times I just keep busy through lunch and forget about it until about 2 o’clock when I suddenly realize I NEED to eat something. 

Insert: Easy to make chicken salad.

I made this up a couple days ago and have been having it for lunch ever since. 

I love it. 

I just took my recipe for curry that I make for dinner and thought, “How would I make this like a chicken salad?”

Serves: 2-3 servings
Ingredients
  • 16oz cooked, shredded chicken
  • 1 celery stalk, minced
  • 1 apple, diced (you can peel it if you prefer but I'm to lazy for such things)
  • ⅓ cup raisins
  • 3 tablespoons minced red onion
  • 1 tablespoon curry powder
  • sea salt and freshly ground pepper to taste
  • ¾ cup plain yogurt
Preparation Instructions
  1. This is the easy part. Simply combine all the ingredients in a medium mixing bowl and stir until combined.
  2. Serve as a sandwich or on a bed of greens.
  3. Done.
