Easy Sprinkle Sugar Cookies

I decided yesterday, since it was my kid’s first day of school, that I should make cookies for them for when they came home from school. 

So nice of me right?

Like any kids, the only kind of cookie they truly desire is a roll out sugar cookie with sprinkles. Which of course are the most annoying kind of cookie to make. I love sugar cookies too but that is simply a Christmastime treat in my opinion. Only because it’s so much work to make them. 

So I decided to make these.

The kids get their sprinkles, I get a delicious cookie that wasn’t hard to make. Win. Win.

Serves: makes about 2 dozen cookies
Ingredients
  • 2½ cups unbleached all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1½ cups sugar
  • ⅓ cup sour cream
  • 6 tablespoons unsalted butter, melted
  • ¼ cup coconut (you can use vegetable if you prefer) oil
  • 1 large egg
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 bottle nonpareil sprinkles
Preparation Instructions
  1. Preheat the oven to 350˚.
  2. In a medium mixing bowl, combine the flour, baking soda, baking powder and salt, whisk to combine.
  3. In the bowl of an electric mixer fitted with the paddle attachment, combine the sugar, sour cream and melted butter.
  4. Add the coconut oil, egg, milk and vanilla extract.
  5. Pour in the flour mixture and mix until combined.
  6. Next add the sprinkles, just dump them in and mix it up. If you are more ambitious than I was and want to roll each cookie dough ball in the sprinkles (like you would a snickerdoodle in cinnamon and sugar) they do come out prettier, but I was going for quick so I simply dumped them in and called it good.
  7. Scoop out dough balls and place on a cookie sheet. Bake about 8-10 minutes and let cool on the pan for about 5 before moving them to a cooling rack.
