Homemade Berry Granola Bars

Granola bars are such a great treat to have on hand and these are healthy and delicious at the same time. I love that they are super easy to whip up, you can put whatever you want into them and it makes such a large batch. Some other thoughts I had after making these was adding in chopped dates or other nuts (my granola happened to have nuts in it so I didn’t add any more).

(makes about 24 bars)
Ingredients
3 cups granola
2 cups rolled oats
2 tablespoons chia seeds
3 tablespoons wheat germ
1/2 cup chunky peanut butter
3/4 cup honey
1 teaspoon vanilla extract
1 cup assorted dried berries – I used cherries, craisins, golden raisins and currants

Preparation Instructions

Line a rimmed baking sheet or 9×13″ pan with parchment paper and set aside.

Preheat the oven to 400º. Toast the oats and the wheat germ, tossing every few minutes, until golden, about 15 minutes. Remove from the oven and allow to cool.

While the oats are toasting, combine the honey, vanilla and peanut butter in a small saucepan over medium heat. Stir until combined and then remove from heat and allow to cool.

Once everything is cool combine everything in a large mixing bowl and stir until well coated with the peanut butter mixture.

Dump into the prepared pan and press firmly into the pan and set in the refrigerator until firm. About 30 minutes.

Remove from the fridge and use the parchment paper to lift the mixture out of the pan. Set on a cutting board and cut into bars.

 

NOTE: I made both the Chocolate and Coconut Granola Bars and these with the same batch by mixing everything except the dried fruit together and then dividing the mixture in half. That way you end up with two different varieties but only put in the effort once :)
