Garlic Roasted Potatoes

Garlic Roasted Potatoes

This is pretty much my favorite potato recipe. I usually have to have Jeremiah take the bowl off the dinner table because I can’t stop eating them. They are nice and soft on the inside and have this delicious little bit of a crunch to the outside that I just can’t pull myself away from once I start. 

I make these quite often to change things up a bit from your standard mashies and they do add a bit of flare to the table and go very nicely with a roast or fish or pretty much anything.

Ingredients
  • 6 yukon gold potatoes, diced
  • 4 cloves garlic
  • ¼ cup extra virgin olive oil (if for some reason you have duck fat on hand, use that. It's quite delightful!)
  • kosher salt
  • freshly ground black pepper
  • 1 tablespoon fresh rosemary, minced
Preparation Instructions
  1. Preheat oven to 400º.
  2. Place potatoes on a rimmed baking sheet. Use a garlic press to crush the garlic all over the potatoes, then sprinkle the olive oil (or duck fat), salt, pepper and rosemary all over and toss until all the potatoes are coated.
  3. Place in the oven and roast until golden brown, tossing about every 10 minutes. They should take about 30 minutes to cook through. Serve hot.
