Easy Homemade Macaroni and Cheese

Easy Homemade Mac and Cheese

Easy Homemade Mac and Cheese

This version of mac and cheese is about as simple as it gets. This is the way my mom made it when I was a kid and now I make it for my children.

I refuse to buy the box stuff with all the garbage they put in those, I am even suspicious of the organic versions so I just don’t even bother. As my regular followers should know, I like to know everything that is going into my food and even with organic versions I have looked at there is still all kinds of ingredients with mysterious names.

I am sure my scientist husband could tell me what a lot of the ingredients are but I just don’t like it, so I don’t go there. I just make my own!

This is still not something I make even every week but when we need a quick something on the weekends or when other kids are over I’ll whip this up.

It’s basically just a white sauce with cheese in it. Pretty basic, pretty easy to do and pretty tasty.

Serves: 4
Ingredients
  • 1 pound large macaroni noodles
  • 2 tablespoons butter
  • ¼ cup flour
  • 1½ cups whole milk
  • ½ teaspoon salt
  • 1 cup cheddar cheese if you like it really cheesy feel free to add more (I like Tillamook sharp cheddar)
Preparation Instructions
  1. Cook the noodles according to the package directions.
  2. Melt the butter in another pot over medium heat.
  3. Once it’s all melted add the flour and stir until smooth, let cook for about a minute, stirring.
  4. Add a couple tablespoons of the milk, stir until thick then add a couple more tablespoons and stir again until thick. Continue like this until all the milk is incorporated and the sauce is thick and smooth.
  5. Add the cheese and stir until melted, add the salt.
  6. Once the noodles are done drain, mix with the sauce and serve.
